Preserving pan

Should it be stainless steel or copper? Use a stainless steel or copper preserving pan for making jam and a stainless steel preserving pan for making chutney. The copper will interact with the jam to create a preserve with a stronger colour, however, you can't make chutney in a copper pan as the vinegar will have an adverse reaction with the copper.
